2 Egg yolks
1 teaspoon mustard
1 teaspoon vinegar (apple)
2dl oil (taste natural)
Pinch of salt
NOTE: Please don’t use your expensive extra virgin olive oil for this, since it will taste like nothing but olives.
Start of by mixing yolks, mustard, vinegar and salt in a bowl and give it a thorough whisk, until the mixture starts thickening. If the mixture does not thicken, add a little more salt to it, just be careful not to use too much. The salt will help the mayonnaise get to the right consistency. While whisking, pour in the oil a little at a time. Be sure not to add it too fast, otherwise the mayonnaise will separate. It is important that the mixture obtains the oil before adding more. You can check the consistency of your mayonnaise by taking a tablespoon and put it on a cutting board. It should hold the form for about 2 seconds then float out, then it’s perfect. (Not as solid as the ones you buy in the supermarket)
You can now add your own spices to make it fit your dish. Try dill which is perfect to fish or even cayenne and garlic to spice it up.
TIP: While whisking, use only your wrist instead of the arm. You will thank us later. You may also just use the electric mixer which is by far the easiest way to do this.
